Formatges Bauma is a company that has made goat’s milk cheeses since 1980.
For the first 15 years, the herd lived on the lands of the dairy farm itself. Now this cheesemaker has a friend who supplies the milk and works hard to provide a raw material of quality.

Sensory characteristics
The rind is bloomy with charcoal and a penicillium candidum type mould. The charcoal gives a texture just under the rind that is sticky and almost runny, but so good that care must be taken when cutting the cheese not to miss out on this especially tasty part of the paste. Towards the centre, the paste becomes denser. The mouthfeel is smooth, very creamy and very fresh with an outstanding purity of aromas. The flavour is distinctly citric, with a very fresh mid-intensity and aroma, very cleanly goaty with notes of fresh cream and yoghurt.
