GUÍA PEÑÍN 2019 Pkte. 20
An inspiring wine, with an intense cherry red color and violet reflections. Clean, bright. With good intensity in the nose, where the aromas of ripe red fruits combined with mineral touches and black licorice emerge, as well as the presence of smoked and balsamic notes. The palate is structured and unctuous.
Winemaking process: Vinification process: after a careful selection of the grapes on the table, it is conducted to stainless steel tanks where it performs a pre-fermentation maceration at low temperature for 5 days. Subsequently, a controlled alcoholic fermentation takes place between 18-21ºC between
7 and 10 days and the post-fermentative maceration is carried out for 10 days, with the subsequent discovery.
After the malolactic fermentation, the wine is introduced in French oak barrels for aging for a period of approximately 4 months. After it, the wine is left in the bottle for a minimum period of two months.
Characteristics of the vineyard and soil: Vineyards planted in vases and located on slopes at an altitude between 400 and 600 meters, with an average vineyard age of around 90 years.
Type of soil: clay with the presence of sand in the highest areas.
