TUNA HAMBURGER - CAL PEP RESTAURANT
Tuna contains high amounts of omega 3 fatty acids, good for the heart and the good performance of neural and joints. These acids improve brain function of people in adulthood and reduce the risk of mental illness in old age. It also helps reduce blood pressure and to regulate and reduce blood cholesterol.
Tuna is a healthy and nutritious food, high in protein and low in fat and calories. Among the essential nutrients it contains are: calcium, niacin, vitamins A, B and D and Omega 3 acids. The best season of the tuna in the Mediterranean is during the summer months, therefore, this month we present a recipe for this delicious fish from our shores.
Ingredients
FOR THE PASTE
- 200 gr. tuna loin
- 1 chili pepper
- 1 teaspoon of dry “Jerez”
- 1 onion
- 1 clove garlic
- Minced of garlic
- and parsley Olive oil Salt and pepper
Preparation:
Take the loin of the red tuna and cut in by hand until will be very small (it’s recommended to do it manually with a knife. It's unwise to do with any machine).
Then fry a clove of garlic and chilli pepper with olive oil. Then add to the shredded tuna a teaspoon of the sauce that we’ve fried before, a teaspoon of dry “Jerez”, a big spoonful of cooked onion, some chopped parsley and garlic and put salt and pepper to taste.
Then mix everything (it’s advisable to do so with a wooden spoon) and give it the form of hamburger. Fry the hamburger to taste with a little oil, and finally add cooked onions on top.
