MONKFISH FRITTERS - CAL PEP RESTAURANT
Ingredients (4 people)
- 250g monkfish
- Half a lemon juice
- Salt and pepper
- 400g flour
- 1 clove garlic, minced
- Chopped parsley
- 1 sachet of baking powder
- 300cl beer
For the sauce:
- Mayonnaise
- Mustard seeds
- Two tablespoons lemon juice
Preparation:
Cut the monkfish into cubes, add the juice of half a lemon, salt and pepper and let marinate for 20 minutes.
In a bowl, put the flour, garlic, parsley and sachet baking powder and gradually add the beer and stir until a thick dough like a mayonnaise. You can add more flour or more beer to get the desired texture.
Then add the monkfish to the bowl and let it sit in the fridge and get cold. When cooking, add oil to heat and, with the aid of two spoons, shape fritters to the dough we’ve cool before and add it directly to oil, that should be hot but not boiling. Remove the fritters until they are round and golden.
For the sauce, mix mayonnaise, mustard seeds and two tablespoons of lemon juice. Once fried donuts, you can serve with the sauce.
