MINI BEAN AND ARTICHOKE HEARTS WITH MINT OIL-

Ingredients
- 250 gr. mini bean
- 250 gr. artichoke hearts
- 500 g squid cleaned
- 3 onions (shredded)
- 5 chopped garlic
- 10 mint leaves
- Virgin olive oil
- 2 cups white wine
- Salt and pepper
- Garlic and parsley
Preparation:
Put olive oil in a pot, add the chopped onion, chopped garlic and mint leaves. It leaves fry for a while and then add the beans and artichokes.
Add 2 glasses of white wine, cover and simmer 10 minutes over low heat. After 10 minutes, add a little more water and wine until it is almost entirely covered.
In a separate pan skips a little the squid and, when the pot are boiling for 20 minutes, add to the pot the squid.
10 minutes later, if the beans and artichokes are cooked, remove. Allow to rest for a while and you can serve.
